What is Cafreal ....Cafreal is basically a marinade which is used to marinate chicken, fish , lamb and any other meat. It is famous green marinade in Goan cuisine. It also shows the impact of Portuguese cuisine. It is made up of Coriander Leaves,Garlic, turmeric, cinnamon, cumin. Its bit spicy in taste, aromatic and absolutely delicious.
Though the version of my recipe is not only inspired from the authentic marinade but it is also modified to suite the taste buds of modern culinary lovers. We will use the this in the preparing a healthy yet delicious dish that i named "OVEN BAKED CAFREAL CHICKEN

INGREDIENTS QUANTITY
Chicken (Boneless Thigh) 500g
Hung Curd 20g
For Marinade
Coriander fresh leaves 250 g Mint leaves 150 g Spring onion shallots 200 g Ginger 2 inch Garlic cloves 5-6 cloves Cumin seeds 2 tsp Cloves 2 tbsp Black peppercorn 2 tbsp Green chilies 5no. Lemon juice 4 tbsp Turmeric powder 1 tsp Salt 2 tsp Sugar 1tsp Cinnamon powder ½ tsp Vegetable oil 1 tbsp
Method
1 Put all the ingredients of marinade in blender and blend until a smooth paste is formed.
2 Take 4 pieces of boneless and cleaned chicken thigh, marinate them with the cafreal marination and 1 tablespoon of hung curd, rest in the chiller for at least 1 hour.
3 Bring the oven to the temperature of 180 degree centigrade, place the marinated chicken thighs in a baking tray.
4 Bake the chicken for 10 minutes. Take the chicken out from the oven and cover the baking tray using silver foil, cook for another 10 minutes.
5.Check for the doneness of the chicken, plate and present with sliced onion rings, any kind of your favorite dip mint sauce, tamarind sauce.
